Vegans enjoy good old comfort foods as much as anyone else-but if you go to your local diner, you usually don't find too much to choose from. Despair no more. Now you can have your Blue Plate Special and eat it too!

Tamasin Noyes, creator of the popular Vegan Appetite blog (www.veganappetite.com), has just come out with her own cookbook, American Vegan Kitchen, which is packed with all of your favorite comfort food dishes. Start your day with a Western Omelet or Country Skillet-or maybe some Cinnamon Flapjacks. Noyes even provides recipes for vegan sausage links made with wheat gluten and tofu or the bacon-like Seitan Breakfast Strips.

Later in the day, go for one of her delicious soups like Mom's Noodle Soup-just like your mom (or grandma) made but with seitan instead of chicken. Deli-type salads include pasta, bean, potato, and much more. I loved the Midtown Greek Salad topped with Faux Feta made from tofu and nutritional yeast flakes.

The cookbook offers a wide variety of sandwiches from veggie burgers to Seitan on a Shingle (similar to chipped beef) to Almost-Philly Cheese Steak Sandwiches. My daughters enjoyed baking the Sandwich Bread (we substituted whole wheat flour for the bread flour) and we're looking forward to making the Fifty/Fifty Burger Buns as well.

The entrée's were definitely my favorite part. Salisbury-Style Steak with Mushrooms, Tuna-Free Noodle Casserole, Seitan and Herb Dumplings-it just doesn't get any better. Well, except for dessert. Peachy Keen Cobbler, Cherry Turnovers, Mom's Apple Pie, and Banana Split Cake are just a few my family is dying to try. As for me, I think I'll go whip up a Vanilla Espresso Shake and get cooking.
