Fit For Life CookbookThis is a very large, extremely informative cookbook by Marilyn Diamond, co-author of Fit For Life, also an excellent book I'll review later. All of the recipes are vegan and there are literally hundreds of them.

Besides the recipes, the book includes chapters such as: Nutrition Update, The Fit For Life Kitchen, The Vegetarian Shopping List, and an extensive Appendix that contains vital and interesting information about vegan nutrition. With hundreds of recipes in this book, you won't soon run out of ideas for great vegan meals.

Some of our favorite recipes are: Fruit Smoothies, Tofu Scrambler, "Stedda" Tuna, Sweet and Sour Eggplant, Potato Boats, Curried Potato Salad, Oat Chewies, Cashew Cream, and Peaches and Cream Pie.

Most recipes are easy to make, though some require a lot of ingredients and a certain expertise that comes with time and practice. This book is a staple in our home. Whenever we want an interesting and new experience we take out the book, pour through it, and plan our shopping list. I highly recommend its use in any vegan kitchen.
