Vegan Recipes - Breakfast

Morning Muffins

Muffins
Ingredients:
  • 1 1/3 cup Whole Wheat Flour
  • 3/4 cups Brown Sugar
  • 1 1/2 teaspoon Baking Soda
  • 1 1/2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1 Whole Banana, mashed
  • 1/3 cup oil (or use applesauce for a low fat muffin)
  • 1 Apple, skinned, cored, and diced
  • 1/2 cup Raisins
  • 3 Medium sized carrots, grated
  • 1/2 cup Walnuts or nuts of your choice

Mix together all dry ingredients. Add in wet ingredients and mix well. Pour into muffin pan and bake at 350 F for about 30 minutes.

Yields 12 muffins.
