Christmas Pecans

Ingredients:
  • 1/4 cup plus 1-1/2 teaspoons vegan margarine
  • 1 lb. confectioners or granulated sugar
  • 8 oz. vegan chocolate pieces (or carob)
  • 3 cups pecan halves
Directions:
Cream ¼ cup softened margarine; gradually add sugar. Beat until smooth and thick.

Using sugar on hands, shape mixture into small balls. Press pecan half on each side of ball and chill.

Melt chocolate or carob with 1-1/2 teaspoons margarine in top of double boiler over hot water.

Dip one end of each pecan ball in chocolate and put on wax paper-lined cookie sheet. Chill until firm.

Comments:
For the adults, you can add 1/3 cup bourbon with the sugar.
