Pina Colada Cheesecake

Pina Colada Cheesecake

Try this easy-to-make, tropical cheesecake for your next dessert dish.



Cheesecake Ingredients:
  • 1 1/4 cup canned pineapple (in its own juice)
  • 1 cup raw cashews
  • 4 oz melted coconut butter
  • 1/8 cup agave nectar
  • 1 tablespoon pineapple juice
  • 1 1/2 teaspoon vanilla extract

Blend all of the ingredients in a vita mix or high speed blender until completely smooth. For more texture,
add around 1/2 more pineapple after the mixture is blended

Crust Ingredients;
  • 1 cup raw almonds
  • 4 pitted dates
  • 1/2 teaspoon vanilla
  • pinch of salt
  • cinnamon to taste
  • Approx1 tablespoon flax seed oil
Grind nuts in a food processor until finely chopped, add rest of ingredients, and blend well. Press into the bottom of a pie plate to form shell.

Pour filling into crust and refrigerate until firm. (put in freezer to chill quicker.)
