Rice Pudding With Raisins

Ingredients:
  • 1 cup raisins, packed
  • 1/3 cup apple juice
  • 1 cup soy milk
  • 1 12.3-ounce package extra firm silken tofu
  • 2/3 cup maple syrup
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 Tablespoons cornstarch dissolved in 1-1/2 Tablespoons water
  • 2 teaspoons vanilla
  • 2 cups cooked brown or white rice
Directions: Preheat oven to 375 degrees. In a small bowl, soak the raisins in the apple juice for at least 10 minutes, stirring occasionally. Meanwhile, puree all ingredients except rice and raisin mixture in a food processor. When mixture is smooth, add rice and process briefly, just enough to blend in the rice. Drain raisins of excess juice and stir into mixture. Pour into a baking dish, and bake for 1 hour. The pudding will firm up as it cools. Serves 8.
