Bean Sprout Medley

Ingredients:
  • olive oil
  • 1/2 thin sliced onion
  • 1/2 red chili pepper, deseeded & sliced thin
  • 2 minced cloves garlic
  • handful chopped mushrooms
  • bean sprouts (as much as you want)
  • sea salt
  • black pepper
  • 1 Tablespoon soy sauce
  • 1 teaspoon rice wine vinegar
  • toasted pine nuts
  • vegan cheese (optional)
Directions:
Sauté onion, chili and garlic in a little olive oil until soft.

Add mushrooms, sauté few minutes. Add bean sprouts and heat through.

Add salt, pepper, soy sauce and rice wine vinegar. Cook for about two minutes.

Pile onto a warm plate and sprinkle with toasted pine nuts and cheese.

Comments:
Good piled on top of mixed lettuce leaves.
