Tasty Pasta Pan

Ingredients:
  • 2 Tablespoons vegan parmesan cheese
  • 2 Tablespoons bread crumbs
  • 1 teaspoon brown sugar
  • 1 celery stalk, thinly sliced
  • 1 cup onion, coarsely chopped
  • 3 Tablespoons extra virgin olive oil
  • 1-1/2 cups vegetarian chicken-style stock
  • 1/2 teaspoon granulated garlic
  • 1/8 teaspoon dried powdered rosemary
  • 1/8 teaspoon dried thyme
  • 1/4 cup parsley, finely chopped
  • 1/2 teaspoon paprika
  • salt to taste
  • 5 slices of vegan bologna, cut into strips
  • 4 vegan sausages, sliced
  • 3/4 pound elbow macaroni or penne, cooked according to package instructions
Directions:
For topping, mix in a small bowl the vegan parmesan cheese, bread crumbs and brown sugar. Set aside.

In a large skillet, sauté the celery and onion in oil. Add the stock and the rest of the seasonings. Cook, stirring frequently until the vegetables are tender (about 15 minutes).

Add the bologna and the sausages. Fold in the pasta. Incorporate well and let the flavors blend about 5 minutes. Add the topping and mix well. Serve.
