Guacamole with a twist

Guacamole Twist Submitted by Dana Ingridients:
  • 1-2 well-ripen avocado (d'ohh)
  • 2-3 cloves of garlic (that's the twist)
  • slice of lemon
  • salt, pepper
  • 1-2 red bell peppers
Directions: Secret # 1: have avocados that are just right, well-ripen but not displaying those ugly black bruises in the flesh. I prefer to buy mine on the hard side, then let them ripen safely in my own kitchen - in the fruit basket. They are ok when they yield a bit when squeezing.

Secret #2: make the most of them! The largest concentration of vitamins is in the bright-green pulp right underneath the peel. So cut the fruit in half, twist to separate, remove pit and scoop with a spoon. If it's still a bit hard, cut into quarters and peel by hand.

Put avocado flesh into a cup or bowl. Immediately add the lemon juice, to prevent browning. Add salt and chopped garlic. Mash with a fork.

Add on toast, with red bell peppers on the side. I like this even better than the classic version.
