Vegan Recipes - Side Dishes

Mexican Rice

Ingredients:
  • 2 cups cooked brown rice
  • 1 cup chunky salsa - medium
  • 1 (15-oz) can pinto or black beans, rinsed and drained
Directions:
Mix ingredients together and serve hot. May add chopped fresh cilantro and/or green chili peppers, if desired.

Comments:
Also good as a filling for burritos or tacos.
