Why Did You Go Vegan?

I had eliminated red meat from my diet for quite a few years. I began to learn about antibiotics in poultry and other diseases of fish, cow's milk, etc. At first, I was a bit resistant, feeling if I gave up fish and all dairy products, there would be nothing left to eat.

My husband has high blood pressure and diabetes and is on medication for both of these conditions. I became concerned about his health. He has a poor family history and he is really at high risk for a heart attack or stroke.

One weekend we visited the Weimar Health Institute just north of Auburn, California. I picked up some information there about their Newstart Lifestyle Program. I read some information about "reversing diabetes." I was very hopeful this program could help my husband. I read testimonials of people from all over the world who attended the Weimar Newstart Program.

My husband knew how much I longed to take a trip to Italy. I prayed about his response before asking him, then I blurted out, "Honey, I'll give up my dream of going to Italy if you will come to the Weimar 18-day Newstart Program (and I'll do it with you)." No arguments, nothing from him. He just said "yes." I was amazed. (By the way, my husband was accustomed to eating pork, all meats, and everything under the sun, much of which is very bad for you.)

Next, I prayed about finding the money to be able to go through the program. We planned our vacation time so we could have three weeks off. I am so grateful we were able to attend the 18-day program in May of this year. What a change it has made in our lives.

After learning everything about the type of diet our bodies need and why a vegan diet is the diet we were designed to eat, I am totally convinced. We attended lectures at Weimar that were put on by the doctors there. We attended cooking classes. We ate our meals in the Weimar Cafe (all vegan, of course). We learned about the importance of regular exercise and had the opportunity to walk on the beautiful trails in the woods there.

By the time we left Weimar, my husband's cholesterol went from 386 to 190, and his doctor at Weimar took him off his high blood pressure medication. I feel so good myself. I was always exhausted before. I often felt discouraged thinking this just can't be what the rest of my life is going to be like. I would come home from work and just the thought of having to stand in the kitchen and cook dinner sometimes made me cry because I felt so tired. I felt like I was slowly dying inside. Now I have energy! I feel good. I am able to come home from work, do the grocery shopping, and come home and cook. I am excited about cooking the new vegan way I have learned about. Also, I have not had to use any of my allergy medication(s) since my first week at Weimar. And what's more, I have energy to go for a walk at night with my husband and the dog. We are going 2 miles around the neighborhood. Our goal is to get to 3 to 5 miles a day.

There's more! At the office where I work they have food around almost every day. There is chocolate everywhere. Someone is always bringing donuts and other unhealthy snacks. I could not resist the donuts and chocolate before. Since returning from Weimar, I have not had one piece of chocolate at work and I am able to resist eating any of the food they have there. I am happy and satisfied on the wonderful, healthy diet that God intended for us.

I wish everyone could learn of the benefits of a vegan diet. What a difference it makes!
