Why Did You Go Vegan?

I went vegan after my husband had a heart attack. His cholesterol level was 385 when he had a heart attack. Luckily he survived and his doctor explained to us how to change our diet to bring his cholesterol down.

I started making everything low in fat and realized that if we wanted to cut down on cholesterol, why not cut it out entirely? So I learned a little about the vegan diet and started cooking all his meals vegan. He enjoyed them and I enjoyed cooking these new interesting foods. We just love tofu and portobello mushrooms. My husband rarely complains or even mentions the meat he used to eat. I am very thankful we got a second chance. I also think it's nice that we are not eating animals anymore, though that wasn't why we went vegan initially. I am hoping to spend many more years with my wonderful (vegan!) husband. Thank you.
