Why Did You Go Vegan?

My husband and I became vegans this year, along with our 2 sons. We initially were going to be ovo-lacto vegetarians because we thought it would be too hard to be vegans. My husband, you see, hates most vegetables. Then, we read "Vegan: The ethics of eating", and "Mad Cowboy", and we jointly agreed to become vegans.

Now, I love to cook, which helps! I've had a blast learning new methods, and we love our shopping trip to the local market to "discover" new things to eat. My husband although he hates most vegetables loves the things I've made for him. My youngest son, a picky eater, is still a challenge, but I've eased him into it putting a lot of "strange" foods as toppers for vegan burgers and tofu dogs.

Since I eliminated dairy from my diet, a lot of long-term minor allergies that bothered me have disappeared, along with much of my hayfever. My husband says he feels "cleaner" now, and lighter after meals. My "monthly" breast pain is gone, too. My sons are feeling well, and one of them seems a little better behaved since the switch.

Our weight is dropping. As for energy, well we hike or walk 4 miles or more each day, so energy isn't a problem!

Our recent triumph was when we found out the local Barnes and Nobel, where we'd always loved to browse and read, recently started making their lattes with lite soy milk. Yay!
