Why Did You Go Vegan?

I was diagnosed in December with Type 2 Diabetes. I've been on blood pressure medication for years and years, and was also taking medication for high cholesterol. I knew it was finally time to stop kidding myself, I was in serious trouble.

In doing research on the Web about diabetes, I came across this website:

Now, my daughter has been vegetarian for about three years. I have been doing "parallel" cooking for her since she made this choice, and I was no stranger to accommodating her diet. I began checking out Veganism, to see how many more changes I'd need to make from what I was already doing for her. It seemed within reach.

So, on Ash Wednesday as others prepared to "give up" different things for Lent, I chose to give up meat and all other animal products. I lost about seventeen pounds over Lent. And I FEEL better.

I still need to lose a lot more weight. Veganism seems to be a liveable "diet" and I've found that giving up things I used to enjoy really hasn't made my life as miserable as I thought it would. I might backslide every so often, but I think I'll stay with it.

I have too many plans for the rest of my life to allow diabetes to deprive me of the time I'll need to accomplish them all!
